Interstate 195 is the major artery that travels through the northern section of Jackson, and provides a vital link to the New Jersey Turnpike, the Garden State Parkway, and other arteries. I-195 Exit 16 will place you on Ocean County Route 537.

There's a huge outlet mall on the edge of town near Great Adventure. It's worth a look, but don't count on a bargain.
Eat
Jackson is not known for fine dining. Your best bet is either the Cassville Tavern or some pizza parlor. They're all rather good. If it's kosher you crave, then go to Lakewood, one town east of Jackson.
Drink
Go to the Cassville Tavern. Be quiet and easygoing. Eat up. Tip well. Drive away sober.
Sleep
Jackson is nice enough, but it offers not one place for a traveler to sleep. The nearest towns aren't great. Unless you have friends to stay with, your best bet would be a brand name hotel in Point Pleasant, Freehold, or Toms River. If money is no object then either check into the Molly Pitcher Inn in Red Bank, take a room in Princeton, Summit, or New York City, or rent a house in Spring Lake or Bay Head.
